Bruschetta

Hiya! Today’s post isn’t exactly something sweet, but it’s insanely delicious. For the past few weeks, I have quite literally lived off of bruschetta haha and so I thought I would share how I make it. It’s a tomato mixture spread over a slice of sourdough bread and it’s nice and light for the summer. Enjoy 🙂

Serves: 2 slices (1 person)

Prep time: 15 minutes

Difficulty: Super easy

Ingredients

2 slices of sourdough bread

1 truss tomato

Onion

1/2 teaspoon garlic, extra to spread on bread

1/2 teaspoon olive oil

1/2 tablespoon of basil

Salt and pepper

Butter, to spread on bread

Method:

  1. Heat up a grill and spray with a small amount of oil. Toast the slices of bread. It should only take roughly 10 minutes, varying on your grill and the temperature you set it at.
  2. Meanwhile, chop the tomato and onion and place into bowl. Add garlic, olive oil, basil and salt and pepper.
  3. Cut the toasted bread into halves and spread a bit of butter and garlic on each slice. Spoon tomato mixture onto bread and sprinkle with a bit more basil and pepper. Enjoy!
