Prep time: 30 minutes
Oven temperature: 200°C
Difficulty: Easy (perfect for beginners)
125g caster sugar
265g plain flour
1 tbsp baking powder
2 lightly beaten eggs
115g butter, melted
1 tsp vanilla essence
225g fresh strawberries, quartered
1. Preheat the oven to 200°C (400°F). Line a muffin tin with cupcake cases.
2. In a medium bowl, stir the sugar, flour and baking powder with a spoon.
3. In a slightly larger bowl, beat the eggs, milk, butter and vanilla with an electric whisk until smooth. Add the dry ingredients and stir until the blueberries are just combined. Spoon the batter into the cases.
4. Bake in the oven for 20 minutes. Remove tin from oven and cool for 5 minutes, then enjoy!
