Hi you lovely people! I’m finally getting around to doing another baking post yay haha. I’ve been slightly neglecting my baking the past couple of weeks because everything has just been so hectic!! But I made these super delicious muffins yesterday and figured I would share the recipe 🙂
These are super delicious white chocolate and macadamia nut muffins. Yummm. I absolutely adore this combination. There is something so satisfying about having slightly melted white chocolate combined with the delicate crunch of macadamia nut.
Prep time: 30 minutes
Oven temperature: 175°C
300g self-raising flour
150g caster sugar
200g white chocolate chips
100g macadamia halves
Pinch of salt
4 tbsp butter, melted
1 lightly beaten egg
1. Preheat the oven to 175°C and line 2 muffin tins.
2. In a medium bowl, mix the flour, sugar, choc chips, nuts and salt with a spoon.
3. In a large bowl, beat the butter, milk and egg with an electric beater. Add the flour mixture to the liquid mixture, stirring until just combined. Be careful not to overmix.
4. Spoon the mixture into the muffin tins. Bake for 25 minutes. Remove tin from the oven and cool on a wire rack.
